Winemaking tips from the experts

Here are some of the things that expert winemakers do to make better wine & keep it good to the last bottle. 

USE TABLETS IN THE CRUSHED GRAPES
Grapes are covered in germs (bacteria & fungus) that can spoil the taste of your wine. Grape sterilizer kills the germs so your juice is very clean. Solfotannico tablets are a very good grape sterilizer. Tablets do not spoil the taste of your wine or make you sick. Note that if you are using a Wine Production Kit this is not necessary because the kit contains powder that does the same job.


USE PECTINASE IN RED WINE
Pectinase helps you make clear red wine & it also improves the colour of your wine.

USE WINE YEAST
Wine yeast is not a chemical. It is natural yeast from grapes grown in places where the natural wines are always good. Wine yeast makes you wine boil (ferment) really well. It also make you wine taste better than wild yeast. Wine yeast is natural stuff & will never harm your wine.

USE YEAST NUTRIENT
Wine yeast needs vitamins & minerals to do it’s work properly. Yeast nutrient is like a tonic for yeast. It helps the yeast work really well & this make your wine taste better.

DO NOT WAIT FOR 40 DAYS
Your wine may ferment as quickly as 3 or 4 days. Check it daily to see if it has stopped boiling. If it does stop boiling in a very short time, there is nothing wrong. If your wine stops in a few days & you wait 40 days, your wine will be ruined.

CLEAN YOU WINE 7 DAYS AFTER IT STOPS
When you wine stops boiling, wait for about 7 days then move it to clean & sterile storage containers to get rid of the mud.

USE TABLETS IN THE FINISHED WINE
Solfotannico tables will help your wine stay good after it has been cleaned. Tablets do not spoil the taste of your wine or make you sick. Note that if you are using a Wine Production Kit this is not necessary because the kit contains powder that does the same job.


PROTECT YOUR WINE FROM AIR
Air will spoil your wine very quickly. It makes it taste bad and go brown & cloudy. Do not leave your wine open to the air or store it in containers with a big air space above the wine.

ONLY STORE WINE IN FULL CONTAINERS
Make sure your wine containers are always full. If there is an airspace above the wine, add more wine. If you cannot do this move the wine to smaller containers.

DO NOT TAKE SOME WINE OUT & LEAVE THE REST OF THE WINE IN THE SAME CONTAINER.
If you remove some wine from a storage container, you must put the remaining wine in smaller containers. For example, if you take 10 litres out of a 54 litre demijohn, you should move the remaining wine into a 20 litre demijohn & a 25 litre demijohn.

IF YOU CANNOT PROTECT YOUR WINE FROM AIR, USE WINE OIL
Wine oil floats on top of wine and stops air spoiling the wine if there is a big air space above the wine.
