This American West Coast yeast is a highly flocculent strain that also achieves high levels of attenuation. This lends itself well to lower ester ales but can also reduce bitterness slightly. The crisp flavoured and well defined ales produced by this yeast have seen it taken up by a number of commercial breweries. It is a faster fermenting yeast than a lot of other strains. A great choice for Australian or American Ales that derive heaps of flavour and character from malt and hops.
