In Belgian brewing it's the opposite.\u003c\/p\u003e\n\u003cp\u003eBelgian breweries have used sugar for over a century and Duvel still does. It ferments out completely, so it drops the finishing gravity and leaves the beer dry and crisp rather than sweet and heavy. That dry finish is the reason you can drink a Belgian blonde all afternoon.\u003c\/p\u003e\n\u003cp\u003eTake the sugar out and you've got a pale ale with Belgian yeast in it. Leave it in and you've got a blonde.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eThe yeast does the talking\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003e\u003ca href=\"\/products\/saf-ale-yeast-t-58-11g\"\u003eSafAle T-58\u003c\/a\u003e is a Belgian specialty strain. Clove, white pepper, a little ripe pear.\u003c\/p\u003e\n\u003cp\u003eFerment it cool, around 18C, and the pepper leads. Let it run warmer toward 22C and you'll get more fruit. Both make a good beer, so that's your dial to turn.\u003c\/p\u003e\n\u003cp\u003eIt's also forgiving, which matters if you're brewing in a laundry rather than a fermentation fridge. Anywhere between 18C and 22C works.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eAbout the Nelson Sauvin\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eThis is the part that isn't traditional, and we're not going to pretend otherwise.\u003c\/p\u003e\n\u003cp\u003eA Belgian cafe blonde would normally use Saaz and leave it there. We've kept the Saaz for its soft spice. Then we've added \u003ca href=\"\/products\/hop-pellets-nelson-sauvin\"\u003eNelson Sauvin\u003c\/a\u003e, a New Zealand hop that tastes of white grape and gooseberry.\u003c\/p\u003e\n\u003cp\u003eHere's the reasoning. The clove and pear coming off the Belgian yeast and the Sauvignon Blanc character of the Nelson land in the same place on your palate, so they stack instead of fighting. You get a beer that reads unmistakably Belgian with a bright, almost wine-like lift over the top that no Belgian brewery would think to put there.\u003c\/p\u003e\n\u003cp\u003eIf you'd rather have the strictly traditional version, leave the Nelson out and dry hop with Saaz instead. It'll be a good beer. Just a more familiar one.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eBrew day is short\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eNo mash. No 60 minute boil.\u003c\/p\u003e\n\u003cp\u003eDissolve everything in the pot, bring it to the boil, turn the heat straight off and steep the hops for 20 minutes. Top up, pitch the yeast, walk away. You're done in about an hour.\u003c\/p\u003e\n\u003cp\u003eThe can is already bittered, so nothing rides on your timing.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eWhat to expect in the glass\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003ePale gold, with a tall white head that stays put.\u003c\/p\u003e\n\u003cp\u003eIt won't be brilliantly clear, and it isn't meant to be. T-58 settles into a fine powdery layer and the beer is bottle conditioned, so there's live yeast in every bottle. Give them three days in the fridge before you open one, then pour gently and leave the last centimetre behind. That's how Belgian beer gets served at home.\u003c\/p\u003e\n\u003cp\u003eFirst pour at three weeks.
