More about why citric and tartaric acids are an essential ingredient to making fresh lemon cordial:

Citric and tartaric acids are key to making fresh lemonade because they boost the tartness, balance the sweetness, and enhance the overall flavor. Citric acid provides a bright, refreshing tang, while tartaric acid adds depth and a fuller mouthfeel.  Together, they give the lemonade a well-rounded, zesty flavor that’s deliciously balanced and keeps well over time.
